Choctawhatchee Bay: Destin's Overlooked Fishery
Most people associate Destin with offshore fishing — bluewater runs to the reef, Snapper limits, trolling for pelagics. But the backwater fishery in Choctawhatchee Bay is world-class in its own right, stretching over 30 miles of brackish estuary from the Choctawhatchee River delta to the East Pass inlet where it meets the Gulf.
The bay averages just 10 feet deep, with vast seagrass flats, oyster bars, creek mouths, and dredge spoil islands that hold fish twelve months a year. For anglers who prefer sight-casting to tailing Redfish or working a popping cork over a grass flat at dawn, this is the trip to book.
The Big Three: Redfish, Speckled Trout, and Flounder
Redfish
Redfish fishing in Destin revolves around the bay's extensive grass flats and oyster bars. Slot-sized fish (18-27 inches) are available year-round, but fall is prime time. From September through November, schools of Redfish push onto shallow flats during morning low tides, tailing as they root for crabs and shrimp. Sight-casting gold spoons or soft plastics to these fish is some of the most exciting shallow-water fishing on the Gulf Coast.
During colder months, Redfish move into deeper channels and creek mouths. Live shrimp fished on a jighead near the Choctawhatchee River delta produces consistent fish through winter.
Speckled Trout
The Speckled Trout fishery in Destin peaks twice a year. Spring (March-May) sees fish moving back onto the grass flats after winter, aggressively feeding on finger mullet and shrimp. Fall (October-November) brings a second surge as Trout feed heavily before cooler water slows their metabolism.
Top-producing areas include:
- Grass flats along the north shore between Freeport and Portland
- The spoil islands near Mid-Bay Bridge
- Sandy points at the mouths of bayous on the south shore
- The deep hole at the east end of the Destin Bridge
Flounder
Flounder in Destin are structure-oriented ambush feeders. Sandy bottom near channel edges, dock pilings, and bridge rubble are consistent producers. The fall Flounder run (October-November) is the marquee event, when fish stage near East Pass before their spawning migration into the Gulf. Bouncing a live bull minnow on a jighead along the sandy edges of the pass produces the biggest Flounder of the year.

A medium-light spinning rod in the 7-foot range spooled with 10-pound braid and a 15-pound fluorocarbon leader handles 90% of Choctawhatchee Bay situations. Carry a selection of 1/8 to 1/4 oz jigheads, gold and silver spoons, and topwater plugs like a Heddon Super Spook Jr. for dawn and dusk Trout sessions.
Live bait is king on tougher days. A few dozen live shrimp from the Half Hitch bait shop on the Destin Harbor covers you for Trout, Redfish, Flounder, and Sheepshead. Swap to live bull minnows for dedicated Flounder fishing along the passes and channels.
Wading vs. Boat Access
Choctawhatchee Bay is one of the better wade-fishing destinations on the Panhandle. Several public access points along Highway 20 and at Henderson Beach State Park offer walk-in access to productive flats. That said, a shallow-draft skiff or kayak opens up miles of shoreline and spoil islands that see minimal pressure. Local kayak launches at Cessna Park and the Marler Bridge parking area are popular starting points.
For guided trips, inshore charters out of Destin Harbor typically run 4 to 6 hours on a flats boat or bay boat. Morning trips starting at first light consistently outproduce afternoon departures, particularly for Speckled Trout.
